Arsenal Cheese
onathan Gaugler had a wild idea. He wanted to craft his own cheese and make a living selling it. Jon calls his company Arsenal Cheese after the Allegheny Arsenal in Pittsburgh, PA that blew up on September 17, 1862; a civilian tragedy that would be overshadowed by the Battle of Antietam, which transpired the same day. He lives and cultivates his curds only blocks away from the site which was turned into a public park. We studied woodtype of the 19th century to fashion a design befitting of the Arsenal name and legacy. The final product was printed on unbleached recycled sticker stock. He has recently been besieged by orders from local grocers and restraunts. His small labor of love has “blown up”, not by accident but by design.
